Cumin Black Beans

Dress up a can of black beans for a quick and easy taco night side dish!

You know those recipes that you return to again and again? The ones that are decptively simple but taste amazing? These beans are that thing. They go with a million dishes. They are just dressed up canned beans, so you don’t need to plan ahead to soak and cook them. In 20 minutes, maybe 15 if you prep quickly, you have a very solid pot of beans. They are great with poblano, but also with onion alone. You can add flavors, adjust the spice level, make them into whatever you need. I. Love. These. Beans.

Cumin Black Beans

  • 15 oz can black beans- don’t drain it!
  • 1/2 cup finely diced yellow onion
  • 1-2 garlic cloves, minced
  • 1 poblano pepper, diced, optional
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper

In a small sauté pan or pot, heat 1 tbsp oil over medium. Add the onion (and poblano, if using), season with salt and pepper, and sauté until onion is translucent but not brown. Stir in the garlic and cook 1 minute, then pour in the undrained can of beans and their liquid. Add spices and stir to combine. Reduce heat to low and simmer until thickened, about 10 minutes.
